Celiac friendly! Chips get a dedicated fryer, tacos can be served on corn tortillas or bib lettuce, and all the sauces are made with corn starch rather than flour. I am sensitive enough to react if my food shares a convection oven with wheat bread and I did not react at all to eating here. This is not your typical Mexican restaurant where everything is served with refried beans and Mexican rice. Think salmon and pineapple tacos or roasted cauliflower tacos! The food is fabulous and so was our server – Ashley D promptly got the answers to my questions, was very efficient, and is all around just one of those super nice people who is a pleasure to meet! 2023 update, passing through the Denver area again and it was just as good as we remembered!
