Culinary laboratory as well as cooking. Open kitchen very nice to look at. Gluten free dishes are NOT certified. Some dishes were already finished, but it is the concept of a cuisine of this type. Get a single dish with 3 dishes so you can taste more things. Spartan place with joined planks. I'm not thrilled with the service: the two guys (waiters) seemed tired and with little desire to answer questions. I applaud the owner who personally came to apologize because the vegan dish I wanted was sold out.
