Our group of four turned up near close and were still offered a table with out reservations. My friend is celiac and the staff checked with the chef on available options.
The food was the best we have tasted in 2 weeks in France. Bursting with Fresh flavours and beautifully presented our meals arrived in minutes. The waiter was very polite and accommodating. He explained all the dishes available.
Would recommend to all future travellers.

The knowledgeable staff were also able to advise in French and English on gluten free options (almost everything was or could be adjusted to be GF and we saw great communication between front of house and kitchen in the topic of "sans gluten"). They took care and were happy to accommodate.
The dark cracker-like thing atop my wife's lamb was a buckwheat cracker (gluten free). It disguised the amazing candied lamb shoulder beneath!! My steak was perfectly cooked and our entrees were wonderful. Dessert was a real treat too!!
This place is actually worth a detour if you're staying elsewhere in the Loire... Treat yourself to a (reasonably priced) meal here and a stroll through the town and up to the castle for a fantastic view. You won't regret it!!
Wow! This restaurant gets better every time I have lunch there. This is the ideal place to relax over creative and delicious cuisine after a morning in Saumur. Be aware though, for most of the year reservations are absolutely necessary.
The food is amazing. They have at least one vegetarian selection and one fish. The food is prepared and presented with exquisite care.
The fact that the vegetarian option on the daily menu was also gluten free is amazing.
The wine list is encyclopaedic and I have never had a disappointing aperitif, main course, or dessert wine.
L'Essential had a Michelin mention, but it is a crime that it does not have 2 stars.
I highly recommend this place. It is always booked in advance as the locals know they are on to a good thing.
