Excellent food and super friendly owner! Couldn't believe we found this vegan gem in the small town of Trinidad. My girlfriend is celiac and the owner of this place happens to be gluten-free as well, so they had plenty of options for her. They use a lot of locally sourced ingredients and appear to make everything from scratch. Only positive vibes here and all the plants make for a relaxing atmosphere. We look forward to eating here next time we're in Trinidad!

I came to Trinidad. CO ti visit my brother-in-law He mentioned collies bakery was really good. I decided to give a look. I saw several gluten free items had to get for my wife. Including gluten free cheese cake. .my wife was in heaven!! Then I looked further and had to have cinnamon buns. Sticky rolls. almond cousants, coconut macaroons with chocolate base, blue berry scones All made from scratch the best ingredients All I can say you need to come to Trinidad CO just for Collies Bakery off on Commerce and Main.
