A wood-fired bakery. It's a little bit off Komachi Street from Kamakura Genjian, but it's tucked away, so if you follow the udon restaurant Inoue Shoten as a landmark, you'll see it. When I asked him about it, he said that he was self-taught and built the kiln by himself. It was built using fire-resistant bricks, and the kiln was heated every day. Before I even eat the bread, I'm shocked at how serious they are. There is a lot of firewood piled up on the outside wall, but it must be difficult to carry it to this place. The bread seems to be made only from rice flour, but apparently they used to make bread using flour from Hokkaido, but the yeast didn't work out so they switched to rice flour and it's been 10 months since they started again. did. This is a shop that is full of the personality of the owner, who is very particular about everything. I think it's simply because there's no gluten that it doesn't rise, but even though it looks small, it's heavy when you hold it! ! The staff at the store also explained that it weighs 1.5 onigiri, so I don't think it's completely similar to wheat flour bread, but rather it feels like it's a completely different thing, even though it's called bread.
