Apollo Pizza Corbin Taproom

Came here on day two and day three and both times the pizza was amazing. It’s literally the only pizza in Corbin that’s cooked properly. The servers were nice both times. The bathrooms were nice and clean. The wait is really bad as expected, do NOT come here on your lunch break. Don’t even attempt to come here for a month or two until they get it together, unless you have time to kill and it’s 11 AM. The pizza is really worth the wait however. I will say they need to hire more people to the front of house AND back of house just to keep it moving along. The server kids seem frazzled under pressure and they really need to do some team building and training. The manager/owner(?) needs to be serving people instead of showing his friends around. They need to put some decorations on the walls and some different channels on the tvs. And get napkin caddies for the tables so people don’t have to depend on the servers to bring them napkins. This place has a lot of potential. For gluten-free folks: The “almost gluten-free” crust is actually just cauliflower, but they describe the crust as “almost” gluten-free because they can’t promise the cauliflower crust not coming into contact with flour from their other dough. It probably isn’t safe for someone with Celiac but if you’re only mildly sensitive it should be okay. I didn’t try the cauliflower crust so I can’t attest to how good it is but it’s good to know. I feel like their menu should be more specific about this because it can make people sick if they forget to ask. It’s something that should be taken more seriously.
