I said I had celiac when I sat down, ordered tortilla soup and said I was excited to learn I could eat it it. I then ordered garlic parm wings, and was brought boneless wings, with breading. The issue was corrected quickly, but this could have ended really badly. I know I should have explained what celiac is, but I guess I'd thought by now this would be a normal part of food service training. I feel like this is on management, not the individual server, to be clear. Also, when someone orders wings, the default should be bone-in? I don't know. Learning experience for both the server and me, I guess. We've eaten there a number of times before and will be back.
