Gluten free bakery in St. Michel
Think it’s okay but they could do better.. had the focaccia of the day, quite dry / stodgy bread without enough tomato sauce. It seems like everything is there, but it just doesn’t taste delicious. Maybe doing less items with more care? Everything looks good, but the taste is bland. (It’s my second visit and the first time was similar, underwhelming compared to other good sandwich places)
Ordered a flat white and that was also average, especially considering how many places do good coffee nowadays. I understand espresso is what the French normally drink, but could be worth upping the latte/cappuccino game, foaming the milk better, as this was just an americano with warm milk. Many people are drinking these.
The Lemon tart was the best part.
I’m a chef, so I know the scene quite well, and if they want to be there for a long time, I’d definitely consider focusing more on the taste and quality. “It’s just a gluten free bakery” isn’t good enough, the taste still needs to be great!
