I informed upon arrival that I need to eat gluten free and was told that would not be a problem. When I finally got my (really delicious) plate of food, I noticed that it had fried onions as a topping. Fried onions usually contain gluten if they are prepared yourself. So I assumed it would be gluten-free because I had mentioned that several times. Unfortunately, not long after dinner I became quite ill and was no longer able to enjoy my weekend in Bruges. It is really important to know what allergies are.
