Good bagels, very nice sandwiches with fresh ingredients, and hand-made cream cheese. Nice selection of different seasonings, especially fond of the Spicy Everything. NY Bagel Snob review: the bagels are kettle-boiled correctly, so they do have the sheen and crisp crust that seals in the moisture when baking. They so not appear to be proofing them overnight, they have an early morning crew that gets there around 4am to start bagel production and they let them proof for a little while at room temperature. If the customer gets there earlier in the day, then it is more likely you get a chewier crumb, if you get there later the crumb will be less chewy and lack the elastic stretch of a correctly proofed bagel. They appear to be using a standard bread flour and not a high-gluten flour (e.g., Gold Medal All-Trumps [available at Restaurant Depot in Chantilly], or King Arthur Sir Lancelot). I believe if they switched to a high gluten flour it would add the expected chew for all of their bagels. The Leesburg location near TJ's is the one facility they do all of their production at, and they stock their other locations in Downtown Leesburg and Purcellville from this location.
