I have been on a gluten free/reduced diet for several years. But, when I heard about the purity of the flour used to make Cavalli's Pizza, I decided to try an experiment: I shared a small pizza with a friend and had NO adverse reactions to indulging in some delicious pizza.
I'm not suggesting that everyone with a gluten issue be so bold, but I believe that it isn't the gluten that causes me to feel terrible, but the additives, processing, and GMO's in most flour. Cavalli's will be my personal oasis when I have a craving for pizza. Thanks for taking such care in the quality of your ingredients.
