Although they serve gluten-free poutines and the employees told me that cross-contact is almost impossible (because they make their fries in a different oil than other foods), I do NOT recommend this for celiacs. My sister who suffers from this disease was very, very ill following her experience there. However, for non-celiac people I recommend because the food is delicious.

Good morning, A friend told me about his adventure with Gérard. He is celiac. When he saw gluten-free poutine on the menu and he hadn't eaten poutine in so long, he took a chance. He shouldn't have!!! Just because you're careful about what you put in your food doesn't mean that all the ingredients used in something you buy don't have gluten. You don't use flour for your sauce. You use gluten-free flour. Okay But are all the other ingredients, all the spices that are gluten free. That's the question and if you can't say yes without a doubt, you can't say your poutine is gluten-free. I have two examples. Many, if not the majority, gum contain gluten and many pill manufacturers use gluten as a binding agent. So if you use spices, that doesn't mean they used gluten in their ingredient list, but it doesn't mean there isn't any either. In any case, to all celiacs... be careful.
