I don’t have to eat Gluten-free food. I did once for about 4 months 15 years ago. It was tough to do. I love Corazón Cake Company‘s products not because they are gluten free; but because they are just so really good. “Really good” is a guy phrase for “fantastic” or “great.” I have my favorites and Caitlyn knows what they are. She’s very creative with her flavor combinations. Her cakes slices are always moist. When you eat the icing you just know she didn’t cut any corners with the ingredients. Caitlyn is the only person I know who bakes Gluten-free cakes and sweets. Trust me; you wouldn’t know they were Gluten-free unless she told you. My favorites are her Apple-Cinnamon cakes slices and her Million Dollar Shortbread thingies (not sure of the exact name) made with a shortbread bottoms (really, really good stuff) with a layer of salty caramel covered with chocolate.
