I've seen few reviews from celiacs, so here we go:
The stew menu is similar to the "normal" one, but the bread starter is replaced with a rice toast (one of those rectangular ones from Mercadona), the bread is gluten-free (€1.40 a portion), the filling and meatballs are also gluten-free, and of course, the noodles, which are served in a different bowl than the rest, I imagine to differentiate them.
When you get to dessert, they tell you that if you want a gluten-free option, you have to choose from the ones they have (all with a €2 supplement per unit or up to €4.50).
Aside from the prices, the stew is good and the portions are good. Perhaps overpriced.
