As we had not thought far enough in advance to make a reservation, we were on the waitlist and were very fortunate and happy when they called us at 4pm to askif we would still like a table, although only the outdoor dining area was availble. We readily accepted outside dining at the available time and are very happy we did. The overall ambience is very nice, but actually I think we would prefer the outside dining - we found it delightful at just the right temperature (around Easter) and light levels (early evening). It was very pleasant; I think probably more spacious and quiet than indoors, so we were very happy with that.
Our server was very polite and attentive, and was careful to take care of my dietary needs to ensure I had a gluten free meal, making modifications where necessary. The food itself was absolutely exquisite!
- Seared ahi tuna appetizer, with a fantastic sauce of butter, lemon, and tamari. I’ve had seared ahi before, but never as good as this!
- Bison tenderloin, with poached pear and goat cheese. Taking a bite of the bison together with a bit of pear and goat cheese was divine.
- Strawberry sorbet - much better than any other sorbet I’ve ever had.
We are only in Moab for a short visit, so will not be able to go back again soon, but the Desert Bistro is definitely on our must-dine list for our next visit.
