Noodle 🍜 lover for life ❤️ I had seen this brand on socials for a few weeks prior to my trip out in the area and I was intrigued by the ability to create/customize my own bowl from start to finish—and of course who wouldn’t be excited for broth on tap?! Some friends were staying nearby so we swung by mid afternoon and it was not busy at all. The location has ample seating and I love all the details! We were greeted and asked if it was our first time as we looked on at all the choices! Staff were friendly and patient with us as we tried to make our decisions. The bowls come in 2 sizes, regular and sumo. You pick your choice of noodle or can get steamed rice. I like they also offer shirataki noodles as a gluten free low carb option…that’s what I went with because I already knew the remainder of my trip was going to be full of misc foods. After selecting your noodle, once they cook them you can select your broth. I went with the tonkotsu pork broth and braised pork belly for my protein. Someone in my group got the Hokkaido beef broth and it was giving pho/boat noodle broth vibes for me. They have different cuts of beef including wagyu and ribeye…mushroom, tofu, chicken…again love the variety to please as many people as possible. There are a variety of cold toppings that can be included depending how you like to dress your noods and there are extras that can be added on like black garlic oil and a whole ramen egg. This is one of those places where I would highly recommend dining in since they have the induction table tops…the bowls are made to work with the tops so you can warm up your broth even more to be able to cook the raw/rare beef…or if you become too chatty then you can warm it up some more. I enjoyed the chopsticks had an attached chopstick rest on them…super cute detail to make my dine in experience…although I failed in cracking it off effectively…that was purely user error. If I’m in the area again would definitely try the other options and I wouldn’t mind if they expand to Chicago LOL. Overall pretty tasty and hit the spot for a quick service situation. This is meant to be more of a neighborhood spot so definitely could see this being in the rotation for some variety.
