This place is 5 stars for waycross. The decor is obviously homemade, but it's clean and nice. We're from a large city and we've lived here for almost 4 years. We have had to travel to large cities just to get salsa that isn't bland because nothing in waycross is any good. The Mexican trailer is good for more authentic Mexican tacos, but this place will make them for you, and the make their salsa FRESH at the table and it's AMAZING!! THE BEST SALSA I'VE EVER HAD! The quantities change depend on who makes it for you and the flavor will vary as well. We had a family of 5 and had less than the table of 2 across from us. As much as i love the salsa, I would be happy if they made it in back in large quantities and gave a little more at the table. The tortillas are made from scratch and to order.... all of the food is. Beware because the "corn" tortillas are amazing... because they have gluten in them. We've been here 4 times since they opened.
Opening night was a mess so we left. They've had staffing issues with covid. We noticed that we weren't acknowledged waiting in the foyer one of the times we went, but since they have upped their game. Our first server was great, but I don't think the staff is knowledgeable about ingredients in the food because when I warned him of my gluten intolerance he gave me the corn tortillas. I knew from the smell, taste, and texture that they were too good to be true.
One of the servers is the daughter of the owner and cook and she went above and beyond to find out what was in the corn tortillas and to ask if I could get them made without gluten in them.... which they will do if you call and ask about 20 minutes ahead of walking in. I'm planning on ordering them togo to use at home. I don't think this place, or any other in town, would be good for anyone with celiac or food allergies... if you want to attempt it with food intolerances I would go during non peak hours so they have time to accommodate.
I will say that some of the food is more tex mex, and they have some interesting things most small town people aren't used to seeing, but they will accommodate and the SALSA is so worth it. Mexican trailer was our go to place in waycross, but it has become run down, dirty, and service is never great. We probably won't go back to Mexican trailer. The prices are comparable to what one would pay for quality, to order, from scratch food. We don't mind paying more for better food, cleaner and nicer environment, and better service.
