I bought this Victoria sponge for my husband as he has a gluten intolerance.
I have to say it is one of the nicest cakes I have ever had! There is no hint at all that it is gluten free, as some gf items are as dry as cardboard (especially shop bought ones). This is a bouncy, moist, delicious, creamy Victoria sponge. Very well done to Ryan and best wishes for your future!
