Showed up with my wife today and enjoyed a long conversation with the brothers about fermentation, gluten, hydration and so on. I am no slouch- I consult restaurants for a living, but what became clear is that these guys are absolute experts at their craft, I had the sense I was talking to true masters. The pizza was fantastic - light, filling and full of flavor, not easy to do. The sandwich was great, but the meatballs were mind blowing. My wife and I ate the pizza, saved the crust and used it to the eat the meatballs. I have half a mind to drive back across town and get the same order again for dinner.
