We've been looking for a good pasta restaurant in the Stowe, Waterbury area for a while and this is it. Located in the beautiful former mill that once housed the original Hen of the Wood, Gallus was an extraordinary dining experience. I had the meatballs as did my wife. She has a gluten issue and the restaurant happily substitutes their gluten-free pasta for many of the dishes. She pronounced it the best gluten-free pasta she's eaten. Extraordinary place.

Ate the most delicious early Mother’s Day dinner here tonight. We were awe of our delicious pasta — y’all, the gluten free pasta was in my top 3 ever (!).
My husband loved his stuffed pappardelle and my mother in law loved her clam pasta. I got the daily special on gluten free and it was crazy good — pasta texture held up well and the sauce was delicious.
Great ambience inside and drank some delicious wine. Highly recommend.
