They're familiar with the ingredients, and there's a list of allergens. However, there's no labeling directly on the flavor labels. We didn't want to believe it at first, but even the cookie ice cream is gluten-free. While some of the flavors were very good, we found the cookie ice cream boring, full of vanilla and too sweet.
