My wife started bringing home Nina’s sourdough bread. As a Type 1 diabetic and gluten sensitive I was hesitant to try it. Surprisingly, the bread hardly affected my blood sugar! I found out later that she does not add sugar in her recipe and yet it tastes amazing. Also, I did not have any gluten symptoms the next day (Achy back/joints) which is amazing when the alternative is GF bread or nothing at all! I now will indulge in peanut butter toast on the weekend without any guilt. Thanks Nina, keep up the great work of making delicious AND healthy bread!
