I had a gluten free sub and I appreciated the care of cleaning and using separate utensils that the server used. However, there were 4 people there and no other customers, plus it was 2:30, so there had been plenty of time to clean up the tables, sweep the floors and take out the overflowing trash. The bathrooms also needed cleaning. My daughter used to manage a Jimmy John's, and no matter when you came in, the store was always immaculate. So I know it can be done at a similar sub shop.
