The staff were quite friendly but the only thing that is gluten-free is the tortilla de patata. They did go to the effort of throwing in some gluten-free bread though.

Gluten-free tortilla sandwich in the old town. The bar is full of crumbs so be careful with cross contamination.
In the kitchen, however, it seems that they do have it quite under control, so with a little care you should be able to eat in peace.
