For the gluten-free people out there or other allergies, they seem very workable. They do allow for people to bring in bottles of gluten-free soy sauce or teriyaki. They are very accommodating in that regard. Our server (not cook) seemed a little less accommodating, but not too bad. I'm sure it is a one-off staff experience.
Since we came in right as they opened, we were able to get a table just ourselves so they could keep it totally gluten free. Out of respect for the company, I do recommend not expecting this on peak hours.
Nave essentially have the same experience as many hibachi grills around the country. Overall A rating.
