Found this market and his wonderful owner at the Waimea Market today. Owner is a wealth of knowledge in preparing each type of fish. He had several fish to choose from and happy to describe texture etc to us. A plus for us is that his poke is gluten free. He even gave us an education on different types of tamari. not all are gluten free as I had thought. Ceviche and poke really amazing for lunch and can’t wait to try the Maunchon fish for dinner!
