An exceptional bread!!. This baker perfectly combines the truly good traditional bread of yesteryear, baked over a wood fire, with a beautiful crust and a perfectly honeycombed crumb, with organic flours with incomparable flavors. I, who tolerate gluten rather poorly, am now reconciled with bread! But not from just anywhere: the must for me, its long-fermented “Rustique”! He says it breaks up gluten molecules, so well. And his Petit Spelled is also a delight. I highly recommend this address.
