Les Baux Jus is hands down the cutest organic, vegan, gluten-free, and raw food restaurant I’ve ever encountered in France! Nestled in the picturesque town of Les Baux de Provence, it feels like a hidden gem that transports you to a dreamy Mediterranean setting. The courtyard is a beautiful patio that could easily belong in Greece or Icaros, adding so much charm to the experience.
The chef, who also serves the tables, is incredibly sweet and clearly loves interacting with customers. He takes pride in helping people select their meals and enjoys watching them savor every bite. And let me tell you, the food is AMAZING! I had the portabella mushroom bun burger with falafel, and it was easily the most delicious falafel I’ve ever had. The freshness of the salad was incredible, and I could feel the love and care that went into each dish. Everything here is organic, raw, gluten-free, and vegan—exactly the kind of food I love to eat (and that’s hard to find in France, especially in charming medieval villages like this one).
