As a parent of a child with celiac disease, finding safe places to eat is not just important—it’s essential. Every vacation we take involves hours of planning, and food is often the hardest part. Maxi Empanadas was one of the very few gluten-free options we found near our vacation spot, so we made a special trip—30 minutes out of the way—just to try it.
Because it’s a food truck, we did our due diligence: checked their website, Facebook, and Instagram to make sure they were open. Everything said they would be there at 5:00 PM. We arrived 15 minutes early and waited… and waited… and waited. We gave them the benefit of the doubt and stuck around until about 5:30. No one ever showed up. No updates on their socials, no signage, nothing.
It may not seem like a big deal to some, but when your child can only safely eat at a handful of places, something like this is incredibly disappointing. We weren’t just hungry—we were hopeful. And unfortunately, that hope turned into frustration and a hungry, sad kiddo.
I truly hope they’ll consider improving communication. Being a gluten-free safe space is so meaningful for families like ours—but reliability matters just as much.
