Minuteman Pizza

Better-than-expected pizza in a “youth hostel” restaurant -20.465280°, -66.825200° Minuteman Revolutionary Pizza, located in the Toñito Hotel, is a popular eatery among travellers exploring the salt flats of Uyuni. Founded by UMass Amherst alumnus Chris Sarage and his Bolivian wife, Sussy Duran, the restaurant has attracted attention for its unique offerings and welcoming atmosphere. Syssy's family runs the Toñito hotel. Guests are often full of praise for the delicious wood-fired oven pizzas, pointing out the generous toppings and flavourful crusts and the many options, including vegan and gluten-free pizzas. We appreciated the cosy and welcoming ‘youth hostel’ environment, making it a good place to wait for our night bus. We broke our rule to try only local dishes during our trips. In April 2025, we ordered the pesto prímavera pizza with pesto base, spinach, onions, roasted peppers and sun-dried tomatoes (large 120Bs, small 70Bs). We had to wait a while, but when our number came, we were looking at a proper pizza. Not the North American variety with the cardboard bottom and imitation cheese, but flavourful crust with tasty pesto topping. This pizza was not far from its Italian origins, but not close either. Good to see Americans baking proper pizza. We enjoyed the pizza with a glass of blonde ale (30Bs). Cash only. Minuteman Revolutionary Pizza offers better-than-expected pizza in a “youth hostel” restaurant. Recommended.

An absolutely awesome gluten free pizza! They are certified for servsafe and were very knowledgeable about what was gluten free, vegetarian, or vegan! I wish I was staying longer so I could eat here again as I'm celiac and this is quite rare for Bolivia. 10/10 recommend!!!
