If flour is high in gluten I get sensitivities. When I ate the food today, I can tell the flour is good quality because it wasn’t chewy and all glued together. It was fluffy and easy to digest. The cheese and zaatar Was delicious. The knaifa is made with quality cheese and ingredients. I’ve worked in a restaurant before, and I know the difference between cheap low quality cheese, and high-quality cheese.

If there were more stars to give, I'd give them. Although it's not on the menu, they were able to accommodate making me a gluten-free cheese knafe which I never thought I would be able to eat it again...let alone one that tastes authentic! Make sure you give them a weeks notice, the wait is 100% worth it.
