In addition to enjoying the delicacy of his dishes, I also really appreciated Nicolas' attention to those who have food intolerances like me. He immediately went out of his way to vary some ingredients so that I could appreciate the flavors of certain dishes that I otherwise wouldn't have been able to taste as I have celiac disease. The fried aubergines without the batter and cooked in pure oil free from flour contamination are delicious! Excellent cook, nice person! 💙
