As someone who's lived in France, Germany, and Austria, I can say that Nightingale is on-par with or better than most European bakeries. Highest-quality local ingredients and incredible variety of bakes. My girlfriend gets raging headaches from virtually all American bread; but she can enjoy anything that comes out of Nightingale. We had a great conversation with the owner, who helped us consider that it may not be gluten sensitivity that steers so many Americans away from bread, but the highly industrialized US processing - including countless herbicides and additives - that renders most bread in the US tasteless and painful to eat.
