I was very happy to find a bakery that had gluten free options. I had a very generous slice of marble cake. It wasn't hard, but it couldn't be said to be fluffy either. The consistency reminded me a little of a compacted sponge - firm, compact and somehow heavier than expected. There was also a certain oiliness that made me briefly consider whether I should perhaps use the cake as furniture polish.
After a few bites, I realized: You don't just eat this cake, you work your way through it. And at some point you have to capitulate - not out of lack of hunger, but out of respect for its sheer massiveness.
