Professional staff, darn good food. I am celiac, which means both that I experience a serious autoimmune reaction when exposed to even a tiny amount of gluten and also that eating at new (to me) restaurants can be a stressful ordeal. Carissa was incredibly gracious and efficient in identifying where cross contamination would be, and my meal was absolutely delicious. I experienced no adverse reaction, which speaks well of the organization and cleanliness of the kitchen as well.
