Here's the lovely response I received from Melissa after receiving a verbal confirmation regarding a cake l. If you can't do it, just say you can't, over the phone. The person I spoke to said it was fine. Talk to your staff.

Good luck trying to find gluten free in the desert at the last minute due to your lack of planning.

Hello, thank you for sending a response aligned with a kind of treatment I received from your business. To be clear, we knew we were calling last minute and were pleased when one of your staff said that they would be able to help us. I'm not a liar, and the tone of your email definitely proves my point.
