So this WAS my favorite place as someone allergic to gluten. But apparently they took the amazing gluten free crust they had and changed it? Now the pizza is much smaller, square and with more of a deep dish crust that is NOT good. I discovered this after getting take out and having to call to make sure I didn’t get the wrong pizza and wouldn’t get sick from it. Very sad as this was the only good celiac safe pizza I’ve had and now it’s gross.

The last three times I visited, I absolutely loved the gluten free pizza option. As long as I asked them to be sure the edges were well-done (which, honestly, I shouldn't have to request), it was one of the best I've had. But when we visited again last night, I found that they changed the gluten free pizza crust. It's now house-made, which I respect, but it's so much worse in terms of pizza satisfaction. Even with asking for it to be well-done on the edges, it came out doughy, undercooked, and lacking all crispness. It's kind of puffy and more like deep dish than thin crust. While I could have sent it back, my dinner companion was almost done with his meal when my pizza arrived. I struggled through a piece and brought the rest home to attempt to salvage with my own gf baking knowledge. Unfortunately, I won't be craving this new version in the future.

It was not broken, but they fixed it. The shock on my face was obvious when I was served the “new“ gluten-free pizza. My server told me that instead of par baking the crust and leaving it in the fridge for three days, they are making the crust to order now. That was information I didn’t need. The difference in the pizza is startling. The new crust makes it more like a “pan pizza“ with a different texture, he said that they wanted to make every bite crunchy. Again, it wasn’t broken, so it didn’t need fixing. I didn’t need to know that the crust was par baked, it was delicious and I felt like I had a “real pizza“ for the first time. I have been here over a dozen times and introduced all of my friends and family to this pizza, I even had my husband eating gluten-free pizza for the first time in his life because you couldn’t tell the difference. I’m not going to say the new pizza is bad, but I’m not going to say that I love it. I don’t care for pan pizza and it reminds me of Pizza Hut pan pizza. I filled out the survey that they had on a little piece of paper and expressed myself, but I wanted to express it here as well. Perhaps give people a choice of the square pizza versus the round pizza? This is no longer something I would drive out of my way for and I hope they take the feedback to heart And bring back the original crust. The server defended their decision pretty hard, said that “change is never easy for anyone,“ it was just such a startling change, and I’m not fond of the new crust
