Fabulous pizzeria in Trieste, excellent confirmation!
We have known this pizzeria for a long time and, whenever we are in this wonderful city, we cannot fail to visit it.
A pizza halfway between the classic Neapolitan style, with a not too important crust, and the Roman style, due to a thickness and consistency in the central part, which is still important.
A style that is difficult to find elsewhere, also thanks to a cooking that is not the classic violent one but which manages to brown the entire dough, giving it a particular speck that tends towards brown and never burnt.
The consistency is satisfying and fragrant, the dough remains moist and light to the bite, the flavor of the flour itself is particularly present, a sign of its excellent quality and, we believe, of moderate refinement.
The ingredients that go into the product are excellent and present in the right quantities, an honorable mention goes to the pizza with pumpkin cream, provola and sausage, with a full-bodied and enveloping flavor and a creamy and melting consistency.
The idea of offering different types of dough, 5 cereals, wholemeal, gluten-free is also nice.
We tried a pizza with 5 cereal dough, appreciating its incredible aroma and incredibly rich flavour, as well as the particularity of the colour.
Raffaele, the owner, is a delightful person, he shows all the love for his product and always welcomes you in the best possible way.
Highly recommended place, an obligatory stop for lovers of the genre.
