But really specify as soy sauce has gluten. The owner is usually there and can tell you with certainty what does and doesn’t have gluten.
I usually do the miso ramen with rice noodle, hot ginger honey tea. Depending on the evening a roll or two of sushi for the road, with gluten free tamari of course.

Delicious! I had Tom Yum vegetarian ramen with gluten-free noodles and tofu and loved it. Mildly to moderately spicy for my palate, which turned out to be just right.
