Spectacular!!! In every sense, let's take it one step at a time. The staff was magnificent. Everyone who served us was excellent, but a very special mention goes to the head waiter or waitress who served us throughout the service and explained each dish to us and politely clarified any questions we had. I take my hat off to Mr. Javier (for those who are gluten intolerant, they have delicious bread and they adapt any dishes they can). We ate in the upstairs dining room. I particularly liked it because it was very quiet, the decor was modern, simple, and well-lit. There's a good wine cellar in the lower dining room. We ordered the business menu and it was honestly spectacular. Fresh asparagus cooked with green olive mayonnaise and anchovy. Duchess of Potatoes a la Importance in a green sauce with borage and quinoa. Menestra of the four queen vegetables bound with fish collagen. Second and main courses: Beef ribs roasted at low temperatures and Cod pil-pil with stewed pig's trotters and snouts, both incredibly prepared. For dessert, a Bourbon vanilla torrija with double cream ice cream and a “brutal” strawberry coulis and figs that were out of this world… all dishes were 10/10s, very good selection, quality, quantity, but above all, the exquisite wine was very well presented. At the end, when we said goodbye to Javier, he told us that they have three more restaurants: Origen 1952, La Huerta de Tudela (which we already knew), and Casalac by Ricardo Gil. Spectacular food. Gazpacho, potato duchess, chives, sirloin and tudela beans with cod kokochas al pil pil, absolutely everything delicious. They know how to work vegetables in a unique way. In addition, the service was excellent, very friendly and helpful. I am pregnant and I have celiac disease, and the care in this regard has been very good.
