In reality, all they do is inform you about cross-contamination. They don't have separate kitchen areas, and the only thing they have is gluten-free bread.
We felt it was just a try, nothing more. I wouldn't recommend it to someone with celiac disease. They themselves tell you they can't guarantee it.
I'm so sorry, but you can either cook with gluten or without it; there's no compromise! It's a matter of health!
