I was in your restaurant in June 2024 precisely because I have celiac disease, with the hope of being able to enjoy a pizza. However, I would like to share some thoughts. When we talk about pizza, we are not referring to a gourmet dish or a food with rare and particular raw materials, to be enjoyed occasionally as an excellent delicacy. Pizza is a typical dish of Italian cuisine that many enjoy regularly, even once a week. For this reason, I find that 15 euros for your Margherita pizza (and I can't imagine the price of other stuffed ones) is an almost unaffordable and unacceptable price, to the point of discouraging frequent consumption.
I understand that you are talking about "a long process of improvement that guarantees quality and food safety to our customers with specific needs," but I would also like to inform you that in Verona there are several pizzerias that offer equally refined gluten-free pizza at more accessible prices. For example, the pizzeria in front of the Arena (which also offers a view of the Arena and listening to the opera) offers quality pizza with gluten-free sourdough, at a lower price. Another pizzeria, just outside Verona, whose pizza chef has won the title of best gluten-free pizza several times at the world championships, has an even more competitive cost.
In light of these considerations, I believe that the 7 euro supplement for your gluten-free pizza (15 euros total), which, in my opinion, was not even that exceptional, is excessive and disproportionate. At this point, it almost seems more like speculation than a real commitment to customers with specific dietary needs.
--I attach the receipt and I would like to point out that it is a joke to tell a tourist to come back for a refund for your mistake. The pizzerias I have proposed are not cheap, but they are honest in price and of absolute quality. I repeat that, as celiacs, we are tired of profiteering on our pathology.
