This 9 times Michelin listed restaurant is a celiac heaven - safe and unapologetically tasty food. The owner, Camelia is the most dedicated, passionate, intellectually vested chef I have met. To say she cares is an understatement. Over two visits, we Nima tested most of the menu. Where we did detect gluten (two dishes), she would not stop until the dish came out gluten free. Simply because she needed to understand. This is a must not miss in Italy. This 9-time Michelin restaurant is a paradise for celiacs: the food is safe and tasty.
