Satsuki

Absolutely the best sushi I've had outside Japan. Kibo (across the river in downtown) has good saucy salty junk-foody sushi for takeout, but if you want to sit down and feel like you're at a 5-star restaurant Satsuki is the place to go. The best way to describe the food is that it feels like a chef spent time thinking about every dish. Nothing here is generic. Everything has a little high-end flair or garnish, like yuzu zest on top, or tofu bits in the inari. They even brew their own soy sauce (which is excellent) and pickle their own ginger (didn't notice the difference from typical pickled ginger really). Prices were typical for sushi in Calgary. We all ate our fill and spent about $25 per person with tax and tip. They were a little understaffed for how busy the restaurant was, so it was a bit slow getting the bill, but otherwise the service was impeccable. Staff are friendly and knowledgeable, food came quickly and in the correct order (appetizers together, then mains together). They give you warm towels to wash your hands before the meal. Kitchen is 100% gluten-free, which is great for the people that matters to. I'm so happy to have this place in our neighbourhood and can't wait to go back.
