We stopped by Shake Shack in Santa Monica, and as someone with symptomatic celiac disease, I was glad to find they offer a gluten-free bun option for their burgers (for an additional $1).
I had the:

The burger was delicious and I had no symptoms, which speaks well for their kitchen handling. However, the fries are not safe for people with celiac, as they are not cooked in a dedicated fryer — something to be aware of.
It’s more of a casual fast-food setup, but they have outdoor seating, which was actually quite pleasant.
