Joe has opened a great business in Simple Simon's. The pizza is unlike any other chain pizza-- the hand-tossed, medium pepperoni with extra cheese has a great flavor. The sauce has a tinge of tomato flavor, not too powerful. The dough is perfect-- not crunchy, but not too soft. I also had the bacon chicken ranch, a warm sandwich with green peppers and onions with a calzone-like bread; I ate it first, and it was so scrumptious I forgot about my pickle spear. I look forward to trying the wings and the gluten-free pizza (cauliflower-based) with my wife. The lobby is pleasant; on this chilly day, it was warm and toasty but not sweltering. There are no tables to sit and eat, so for now, Simple Simon's is takout-only. For a medium, two-topping pizza and a delicious "sub" sandwich, I was not sticker-shocked. There are tip jars for cash and tips are available as well via card payment. Parking is a shopping center (location is the former Eureka Pizza on Tiger Blvd.). The road work on Tiger is complete enough to approach from Walton or from Tiger Blvd.
