We visited Ávila and booked here directly on a recommendation. My wife is celiac, and they have many gluten-free options, including all the desserts, and they take cross-contamination into account. Great place to eat suckling pig. It is very quiet, 30 minutes from the center of Segovia. The food is spectacular, they even have a lot of menu adapted to people who cannot eat gluten, which is appreciated.
