The pizza was ok. I'm gluten-free, so we ordered a cauliflower crust. 0ur pizza good, the crust non existent, gf crust needs some adjustment. Maybe mixing in a little xanthan gum and some gluten-free flour it would be more like a pizza and not just a tasty casserole. Our server was Tracy she was excellent checking on us frequently.
There was a bit of a mix-up on a bill, but I didn't catch it for a few days. Not only did Craft understand the issue but they went beyond to make it right -- three weeks later. So we went back in today. My love had the pastrami sandwich, and he gave me a taste -- tender and delicious! I had bison patties and the grass-fed beef burger, and broccolini. TBH the broccolini was a bit tough-stemmed, but it's not really in season. And the quality of the meats made up for it, anyway! Plus, the pickles. Awesome pickles.
Today the place was crowded, so, sadly, they'd run out of gluten-free bread options. But I am really thrilled with Galesburg -- that a serious quality restaurant with food-issue options is supported! Wheat gives me arthritis symptoms (not uncommon), I'm allergic to pork, and I'm a low-carb diabetic -- and I can eat here!
Not only will we eat here more often, we will be buying meats here. The prices are excellent and the quality is unbeatable.
