It's no longer for Sevillians. It's geared toward tourists. The quality of the food has dropped significantly.
All sandwiches are gluten-free, except for the pringá sandwich.
I don't understand why a bar of this caliber can't adapt this sandwich, with gluten-free bread and a different toaster.

Great for celiacs. All montaditos are gluten-free, as well as several dishes. It's a shame that even though they can make fried foods gluten-free, they don't offer them due to cross contamination.
