Here me out; I NEVER write reviews using half eaten/reheated/paper-plate-photographed food... but this, THIS pizza deserves a heartfelt no-matter-the-physical-documentation-available review. (I do apologize for not photographing sooner in the consuming process, but to be honest, I didn't have unrealistically high expectations for this particular pizza joint. The existing reviews were "so-so," and the menu didn't depict anything truly special. Clearly, I was misled.) We ordered this pizza today purely out of convenience, not realizing it was going to be some of the best local-to-Tennessee-pizza we'd ever eat. I've been gluten-free (by choice, not celiac) for 4 years now, and typically, pizza is an extremely underwhelming experience for me, so I didn't expect much else this time. Surprisingly, not only did their cauliflower crust have an actual appealing flavor (šŸ™Œ) it was perfectly stacked with FLAVORFUL toppings and mounded with the perfect amount of cheese (for cheese lovers, like ME) to make it an acceptable "REAL" pizza! (I think it was called "The Hoss"?. *Pepperoni, Italian sausage (which had an amazing flavor and I highly recommend!!), and extra cheese. Then I added onions... because'duh'.) It was a lovely UNEXPECTED surprise, and I wish we would have taken a chance on them much sooner than we did. šŸ•

My wife and I try to support local, but not sure if we'll go back. Waited a while for a table, then another 10-15 minutes for our waitress first meeting, then 20 min for a simple order of fries, side salad and 8 bone-IN wings. It wasn't busy (5:30p Friday). However, what actually arrived was bone-LESS wings (breaded chicken nuggets). I asked the server when she brought it, and she said "that's all they had". Well why not come back to us FIRST to let us know, so we can possibly change the order?! And my wife couldn't even eat them because of the breading and her gluten free restrictions. Which is why we ordered the bone-in! Then topping it off, they added a 2.5% "convenience fee" on the ticket as we paid CASH! Ridiculous and not acceptable. Sorry Hoss.
